My 400th Recipe: Crispy Grilled Chicken Thighs

 Today is an exciting day!  Today I am celebrating another milestone on my little blog.  Today I am posting my 400th recipe!  Wow!  I can’t believe there are 400 recipes here!  If it wasn’t for Blogger keeping track of my post count, I wouldn’t believe it.  

I have chosen an awesome recipe to be my 400th.  Crispy breaded chicken thighs cooked on the grill.  Breaded chicken on the grill?  Yep!  I know, I was skeptical when I first saw it too, but it was a Food Network recipe and they very rarely steer me wrong, so I thought it was worth a shot. Best risk I ever took!

Crispy Grilled Chicken Thighs


Ingredients:
â…“ cup mayonnaise
1 tbsp chili powder
1 tsp onion powder
½ tsp salt
8 skin-on, bone-in chicken thighs (about 2¼ lbs.)
Vegetable oil, for brushing
1½ cups dry breadcrumbs
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
1 tsp salt


Directions:
Combine the mayonnaise, chili powder, 1 tsp onion powder, and ½ tsp salt in a large bowl. Add the chicken and toss to coat. Cover and refrigerate at least 2 hours or overnight.


Preheat a grill to medium low. Brush the grill grates with vegetable oil. Combine the breadcrumbs, 1 tsp onion powder, garlic powder, smoked paprika, and 1 tsp salt in a shallow dish.  Add the chicken, turning to thoroughly coat. Grill the chicken, turning once, until golden brown and cooked through, 20 to 25 minutes per side.


Makes 4 servings.

I made a few changes, mostly adding seasoning to the breadcrumbs.  I thought they should be seasoned too. This chicken is amazing!  So crispy and crunchy on the inside, while tender and juicy on the inside.  Perfect.  
This was the meal I chose as my “grill take-over” on Father’s Day.  My husband had always done all the grilling at our house, but I was starting to notice that not everything was turning out so well.  I’m just going to come out and say it: things were being burned.  Badly.  Like, beyond recognition.  I had a hunch that the problem was that my husband was grilling everything (burgers, pork chops, bone-in chicken, you name it) on high.  As high as it goes.  Like 700 degrees.  I think it’s kind of a man thing.  Some fire is good, so more must be better, right?  Wrong!  Father’s Day was the perfect time for my grill take-over because I disguised it as giving my husband the day off from grilling.  “I will make the entire dinner, honey. You don’t have to lift a finger!”  My plan worked perfectly.  Until I noticed that every time I came back outside to check on the chicken, my husband was standing at the grill turning the heat up!  So I kept shooing him away.  I grilled that chicken on medium-low the whole time, while he sat there trying to read his book and not notice how I was doing it.  He was very impressed at how it turned out.  So I thought he had finally learned a valuable lesson that day and that he wouldn’t cook everything on high in the future.
He was grilling earlier this week, and he said to me, “You know, I think sometimes it works out better to have the grill on medium instead of high.”  *Forehead slap* Duh!  I guess sometimes you just have to learn things on your own!

My 5 Year Blogiversary and a Giveaway!

Yep, today is my blog’s fifth birthday!  I wrote my first post on March 29, 2007.  Actually I posted twice that day, an introduction and reason why I started the blog, and my first posted recipe, Spicy Mixed Nuts.  As you can tell by the url of the introductory post, my blog was originally called “Culinary Tales.” I knew that wasn’t a great name, but I was itching to get started and couldn’t think of anything better.  It wasn’t long before I came up with Edesia’s Notebook.  Much better, if not just because it was more interesting and memorable.

Some (if not most) of you may be quite surprised that I have been blogging for five years now.  I posted very sporadically at the beginning, and it wasn’t until 2011 that I really got serious about it, posted regularly, and started getting more involved in the food blogger community (thanks mostly to Facebook).    There was a lot going on in my life in the first few years that I had this blog.  Two months after starting the blog, my husband graduated from Seminary, was ordained, and took a divine call here to Michigan.  Moving from St. Louis to Michigan was quite demanding of my time, and a couple of weeks after we settled in, we found out that we were pregnant with our first child.  The first trimester was rough, to say the least!, so food was the last thing on my mind for a long time.  Then, once I started feeling better, we moved again to our first house in the next town over.  I didn’t post very often the year Lena was born; it took some time to get into the swing of motherhood!  Then daughter no. 2 came along in 2010.

Okay, enough of my life story.  I want to share with you the card I got in the mail yesterday.

My mom’s hobby is card-making, and she made this super cute card for me!  She printed off graphics from the blog, and even used my category labels as the background!  I love it! Thanks so much, Mom!

Okay, now I would like to share with you some stats from my blog’s first five years.  I have posted a total of 358 recipes.  First up, my five all-time most popular posts (as determined by number of page views):

This one caught like wildfire on Pinterest last year.  Somebody pinned it and it got over 200 repins.

2.  Chicken Broccoli Rice Casserole (Cream Soup Free)

This was my 300th recipe.
The only recipe in the top five not posted in 2011.  This was a very early one, from October 2007.  This one is popular because of Google searches (see below).
And now, the top five referring sites to my blog.

Three of the top five referring sites are search engines.  This is one reason why I am very particular about how I name my recipes (making sure they accurately represent the dish) and why I title all my posts with the name of the recipe.

This is going to be sappy, but I really want to thank all of my friends and family for supporting me in this endeavor.  As a stay-at-home mom, I don’t get much interaction with other adults on a regular basis, so having this outlet is really important to me.  I would also like to thank each of my 71 followers through Google Friend Connect, each of my 530 Facebook fans, every one of you who has ever commented on a post, shared a post, talked about my blog with your friends, or just dropped me a line to tell me how much you like my blog.  Those things really mean the world to me.
This will sound weird, but I would also like to thank my camera.  Every single picture on this blog was taken with my now over seven-year-old cheapo digital camera that is literally being held together with electrical tape.
This is why I am totally amazed whenever someone comments on a picture on my blog.  I have absolutely no photography training, so when a seasoned food blogger with amazing pics herself, compliments a photo of mine, it totally makes my day!
But mostly I would like to thank my husband, Jim, who puts up with a lot of annoyances in order for me to food blog.  He waits very patiently while I set up my “foodio” in the dining room, hoping that the food doesn’t get too cold while I am taking 20 pictures to get that “one” perfect shot.  He doesn’t complain when I ask him to eat the ugliest muffins because I still need to take pictures of the prettiest.  He has been such a sport whenever I try a new food that he isn’t crazy about, or when I put too many onions in something.  He has supported me 100% from the beginning and I can’t thank him enough. I love you, Babe!

5 Years/500 Fans Giveaway

My 300th Recipe: Pumpkin Pecan Dump Cake


Today I am posting my 300th recipe!  I can’t believe it!  There are a full 300 recipes on this blog.  I have really stepped up my posting this year; in fact it was less than 6 months ago that I posted my 200th recipe.  I just love sharing recipes with all of you!  I would like to take this opportunity to thank all of you for all of the support you have shown me: the lovely comments here on my blog posts, the comments and questions you post on my Facebook page, the shout-outs, and all the times I hear in person, “Lesa, those recipes you post look great!”  As a stay-at-home-mom, I don’t get out much and have very little life beyond my two little ones, so being able to share and interact with a wide community of people about something I am really passionate about really means a lot to me.

I’m sure you are all looking at the picture above and are wondering when I am going to stop rambling and being sappy and get to the recipe.  Well, this is a great recipe to have as my 300th.  It’s one that has been popping up constantly on Pinterest with the name of Pumpkin Crunch Cake.  While I am still mourning the end of summer, I decided it was time to get on with things (namely, fall) and embrace the fall recipes.  I chose this as my first fall recipe of 2011.  While I am sure there are multiple variations of this recipe floating around, the one I followed was from the blog The Picky Apple.  Are you familiar with dump cake?  This is usually a “cake” made by layering dry cake mix with some sort of fruit filling (like canned pie filling).  I had never made one before, but when I looked at this recipe, I realized that this is pretty much a pumpkin version of that.  It has a pumpkin pie-like custard on the bottom, then the sweet cake mix layer in the middle, and it’s topped with a crunchy layer of pecans.  It’s divine!  I decided to rename it to reflect how it’s made.

Pumpkin Pecan Dump Cake


Ingredients:
1 can (15 oz.) pumpkin puree
1 can (12 oz.) evaporated milk
3 large eggs
1½ cups sugar
1 tsp cinnamon
½ tsp salt
1 (18 oz.) box yellow cake mix
1 – 1½ cups chopped pecans 
1 cup butter, melted


Directions:
Preheat oven to 350°.  Grease bottom of 9×13″ pan.  


Mix pumpkin, milk, eggs, sugar, cinnamon, and salt.  Pour mixture into greased pan.  Sprinkle dry cake mix over pumpkin mixture and top with pecans.  Drizzle melted butter over pecans.  


Bake 40-50 minutes or until edges brown.


Let sit 15 minutes before serving.

This is such a great dessert for fall.  It was our first time having pumpkin anything this season, and it tasted so good!  While I love summer and am grudgingly being dragged into fall, I have to say that fall is my favorite “food season”.  Be prepared for lots of recipes involving apples, pecans, maple, pumpkin, squash, etc.  I have a full Pinterest board of fall recipes that I can’t wait to get to.  This recipe was a great intro to fall food!
I took some of this dessert to my friend Sarah who watched our girls on Friday.  She reported that they loved it too.  It’s got that great contrast of textures going on, with the creamy custard and the crunchy pecan layer.  So delightful.

Milestone: 200 Recipes!

I am proud to announce that I just posted my 200th recipe on this blog! It was Slow Cooker Italian Beef & Vegetable Soup.

I can’t believe I’ve got a collection of 200 recipes here! Makes me wonder how many I’ve got in my binder in the kitchen, because there are lots I haven’t blogged about yet.
While it took me two years and five months to post the first hundred recipes, the second hundred only took a year and half.
Thanks so much to all of you who read this blog and comment on it. While I would probably still do it even if nobody read it, I really enjoy getting feedback and hearing that somebody tried one of my recipes.
Here’s to the next hundred recipes!

My 100th Recipe!!


I am pleased to announce that I have just posted my 100th recipe on this blog! It was my Guacamole Rice. Wow, I can’t believe I have blogged about 100 recipes! It’s amazing to see how the recipes have changed since I started. And the pictures have changed a lot too, for the better, in just the last couple of months. (Thanks to some advice I received from a fellow food blogger.)

Blogger tells you each time you sign in how many posts you have. The Guacamole Rice recipe was my 120th, and according to my records, I have 20 non-recipe posts (restaurant reviews, equipment, etc.).
Thanks so much to all of you who actually read this blog. I have really enjoyed doing it the last 2 years and four months or so. Thanks to all of you who made comments. I love getting comments and hearing that other people have tried these recipes.
I’m looking forward to sharing another 100 recipes with you!
